Zaffero    « Cheese    « Home

Inspired by a Sicilian cheese our Zaffero is made with saffron (grown by a friend of mine) and green peppercorns. It has a rectangular shape, is very yellow and weighs between 8 and 9 kilos. When it is ready for sale we portion it and wrap in 700-gram squares.
